Welcome to my blog, The Buttercream Letters! Here’s a little bit about me.

When I started college, I had a dream of becoming a dietitian and wanted nothing more than to help people lose weight. After completing my Bachelor’s Degree in Food, Nutrition, and Dietetics, I did not get accepted into an internship program, which is essential to becoming a dietitian. Instead I struggled for a couple years trying to find my way until I had a revelation, you could say… I wanted to become a pastry chef!

Baking has brought me so much joy over the years. I just never seriously considered it before as a career. My mom taught me everything she knows, and she is my inspiration. I have so many wonderful memories of baking and cooking with her in the kitchen. The memories you create when you bake or cook with someone are priceless and something I value a lot. Deciding to go back to school took a lot of courage, but since I made the decision, my life has been full of joy and surprises! There’s no doubt that I was made to do this.

 

I love running just like some of my family. I have completed the Chicago Marathon twice, several half-marathons, and some smaller races as well. While I love running and living a healthy lifestyle, I also love to bake. Most importantly, I love sharing what I make with friends and family. Experimenting with recipes until I get it right is an exciting challenge for me. I take what I’ve learned in school and from TV and apply it to my baking.

Not only do I enjoy baking, but I love cooking too! I’m always up for trying new recipes whether it’s sweet or savory, but making desserts has always been my favorite. I think I got that from my dad. He had a sweet tooth that wasn’t satisfied after just one dessert! What I love most about baking and cooking is that there is always the possibility of a new twist to an old favorite.

One of my favorite things to bake is scones! I love the flakiness and the endless flavor combinations. It’s also great that they aren’t super sweet. Other favorites of mine to bake are breads, cookies, muffins, cupcakes, and pies. With my nutrition background, sometimes I like to test recipes that are a healthier version of traditional favorites, like chocolate chip cookies.
